Syllabus Topics will include:
a. Understanding the importance of HACCP-based food safety management procedures
b. The preliminary processes for HACCP-based procedures in catering
c. The hazards and controls at every step in the catering operation
d. How to implement HACCP-based food safety
e. How to verify HACCP based procedures
Method of Exam/Assessment:
This qualification is assessed through a multiple-choice exam, which is externally set and marked by Highfield Qualifications. The exam consists of 30 questions, and learners have 60 minutes to complete it. To pass, learners must answer at least 18 questions correctly, while 24 correct answers are needed to achieve a distinction. Upon completion, the exam papers must be returned to Highfield Qualifications for marking, and results will be provided to the centre afterward. The qualification is graded as pass, distinction, or fail. Centres must ensure that no person with a personal interest in the assessment result is involved in any part of the process, including internal quality assurance and invigilation.

This qualification has no mandatory entry requirements. However, it is recommended that learners have a Level 3 Award in Food Safety Manufacturing or an equivalent qualification, a solid understanding of food safety hazards and controls, and at least a Level 2 proficiency in literacy/English or an equivalent qualification. The qualification is approved for learners aged 16 and older.
